Place apples in a plastic bag and freeze 'em over night (this ruptures all of the fruit cells with ice crystals so you get more apple flavor outta them =). Mash grains at 153F for 90 min. Sparge and collect 5 gallons of wort (post boil volume of 4 gallons). Boil for 60 min, adding hops and spices to first wort for max extraction. Add Irish Moss for the final 15 min of the boil. At the end of the boil, steep the (thawed) apples in the wort for 30 min plus the time it takes to chill and transfer to the fermenters. Add a gallon of additive-free apple cider (no preservatives or other crap!) to the fermenter. Chill and transfer the wort from the brewpot to the fermenter.
